The team steeps their homegrown Davidsonia plums—commonly known as the Davidson or Davidson's plum—for a long 18 months, using a variation of their brilliant, over-proofed Macedon Dry recipe, to ensure they've extracted the maximum flavor, character, depth, and complexity from this unique Australian fruit. It is pink in color with a transparent shine. Aromas of lifted spice, ripe lemon, and tart red berry. Through the middle stage, there's a fantastic rush of tart berry, sour plum, and pepper. Herbal, peppery, and juniper with a hint of juniper at the end. Through the aftertaste, there's a hint of spice and citrus sweetness. Traditional sloe gin reimagined in a wonderful way.
