Brewed with groundwater (the original well at the previous distillery, unsuccessful in 1758, remains in use, with the onerous water being drawn from eighty-five feet underground); hard in ‘stone Yorkshire squares’ to make a virtually opaque, splendidly smooth and swish rough-textured beer with a posh medium-dry roof of the mouth and bittersweet end.
