The Grove Distillery, made with love in Margaret River and handcrafted, bottled, and labeled on-site, has been named the Best Australian Absinthe Distillery at the Melbourne International Spirit Competition. They use certified organic botanicals that are macerated in their triple-distilled base alcohol before being re-distilled to remove harsh principles and add complexity and texture to the spirit. Their coloring follows the time-honored method of extracting rich chlorophyll plants during a secondary maceration. This Absinthe has a licorice aroma with a subtle trace of herb and a zesty lemon flavor. Smooth on the palate, with characteristic licorice and herbed overtones and a long, smooth lingering taste of aniseed, fennel, lemon balm, and hyssop.
