Growing: The core blocks for the Sakura Shiraz have been managed to produce grapes with exciting vibrancy and fresh fruit flavors. Budburst occurred on the average date for this event. Lower than average winter and spring rains gave the vines a slow start to the season. Above-average rain during October allowed for adequate shoot growth prior to flowering. Flowering was even and occurred over 2 weeks. The summer provided a ‘warm’ growing season with some average rain events. We continued to apply sunscreen in order to provide a more optimal environment for flavor development in the berries. This is an action that Windowrie has taken to minimize the result of climate change.
Winemaking: The weather was optimal leading into harvest, flavors of dark cherry, blackberry, and mulberry were dominantinthevineyard.Thefruitwasharvestedonthe3rd of March, immediately crushed and inoculated using a yeast strain which was selected for an increase in the body. Delestage and open pump-overs were used to maximize color extraction during the fermentation period. Fermentation lasted six days, on the last day the wine was pressed with the pressings fraction kept separate. MLF was successful and rapid ensuring the wine had minimal microbial activity.
Taste: The wine shows varietal aromatics of fresh plum, complemented with regional mulberry leaf and cracked black pepper on the nose. Oak derived vanilla and clove spice is playing a role ensuring the wine has an attractive aroma. The palate for this wine is an excellent representation of a modern Australian Shiraz wine, full-flavored, ripe but has a lovely vibrancy of characters. As the wine is savored in the mouth, the interplay between flavors is most enjoyable.
The flavors start with juicy dark fruits like blackberry and plums. The mid-palate is well-balanced following with varietal Shiraz characters and a mocha creaminess which is derived from the well-integrated oak. The wine finishes with pleasant tang in weight coming from the ripe Cabernet Sauvignon blended into the wine. This blend is chosen to provide a mouth-filling and well-balanced flavor with length and complexity. The wine is a unique Australian Shiraz, where its beauty is in its complexity and persistence of flavour.
